Super Satisfying Tex Mex Salad!

Oh. My. Word. Made this salad last night for me and my husband's dinner and it was soooooo good!!!

It's savory. It's sweet. It's crunchy. It's creamy. It's quick. It's easy. It's super satisfying.
Basically, it's EPIC.

I can hear your stomach growling from here. But don't be embarrassed. It's okay, I understand. Just make this salad tonight and everything will be okay. :)

I found some organic roasted corn in the frozen section of Whole Foods and thought, "Hmmm... never had this before. Let's try it!" So I tossed it in my shopping cart along with my box of organic fair-trade bananas, 3 cartons of fresh squeezed orange juice, 12 heads of romaine, and frozen organic mangos and peaches. And I was just getting started. :)

If you follow an all raw diet, feel free to substitute fresh raw corn in the recipe because it will still be an epic salad. But if you aren't, then you must try the organic roasted corn! It has an amazing flavor!
When it comes to corn, I always try to go organic. I recommend staying away from GMOs and nasty pesticides and chemicals whenever possible. I also find that organic corn doesn't upset my sensitive tummy like conventional corn does. 


Printable Recipe
  • 3 heads organic romaine, washed
  • 1/2 pint cherry tomatoes
  • about 1 c. mango (fresh or thawed frozen)*
  • 1-2 c. organic roasted corn*
  • small handful of cilantro
  • juice from 1 large lime (or 2 small limes, about 2-4 T. to taste)
  • 1 avocado, sliced or diced
  • 1/4 c. sun dried tomatoes
  1. Chop romaine and place in large serving bowl.
  2. Set aside 6 cherry tomatoes and place the rest in the blender. Then add the mango, cilantro, and lime juice to the blender. Pulse till blended but still chunky (to the consistency of salsa). Pour the mango dressing on the salad.
  3. Slice the remaining tomatoes and add them along with the corn, avocado, and sun dried tomatoes to the salad. Mix salad well till lettuce is evenly coated and serve. Enjoy!
*Don't thaw frozen mango and corn in the microwave! Instead, place a strainer in a bowl and cover with hot tap water. Strain and repeat till thawed through.
