From Pills to Plants: How My Mom Found Hope For Lyme Disease

My mother is the most beautiful person I know both inside and out. But about 15 years ago something happened that drastically changed our lives forever. Her Lyme Disease flared up.

This disease is more common than you think and more devastating than people realize. 

I don't know about you, but I personally know almost a dozen people with Lyme Disease. 

While it seems that the most common symptom is pain, there are also many more. Here are some other symptoms:

  • Muscle twitch, muscle pain or cramps
  • Racing heart
  • Tingling or numb extremities
  • Headaches, sound sensitivity, light sensitivity, double or blurry vision
  • Bell’s Palsy (partial facial paralysis)
  • Chest pain or rib soreness
  • Persistent swollen glands
  • Joint pain, swelling or stiffness
  • Confusion, difficulty in thinking; using the wrong words
  • Forgetfulness, disorientation
  • Mood swings, irritability, depression, anxiety, panic attacks.
  • Gastrointestinal problems, including nausea, vomiting, IBS.
  • Possible connections to Fibromyalgia (FMS), ADHD, anxiety disorder, bipolar disorder, insomnia, post-traumatic stress disorder and more — because Lyme disease impacts the HPA (Hypothalamic-Pituitary-Adrenal Axis), and many of these illnesses are associated with HPA imbalance. [Source]

I remember when my mother's Lyme Disease flared up. 

I was young and didn't understand what was going on... I don't know if anyone really did at the time. Since my mom is not a complainer, I only knew of the visible and interactive symptoms and not the ones she was feeling inside. Not only did her body swell (edema), but also her cognitive abilities started to wane. I remember having conversations with my mom and having to repeat myself multiple times because she forgot almost immediately what we were talking about or what was said. 

Initially, doctors thought she was crazy.

They kept recommending her to see a psychiatrist. But we all knew she wasn't; we knew her pain was real. Eventually, she was diagnosed and put on heavy antibiotics and other strong medicines. This really affected my mom in a horrible way – digestion, weight, pain, cognition, and even her personality. 

But she didn't stop praying and hoping... and neither did we.

How I Reversed My Hypothyroidism And Stumped My Doctors With My Autoimmune Disease

"You will never get better. You will only get worse. You will have to take medicine the rest of your life."

This is what multiple doctors told me when I first got diagnosed with the autoimmune disease Hashimoto Thyroiditis at age 13. I was discouraged to say the least, but I trusted my doctors. I thought they understood this disease and knew how to help those suffering from it.

In a way, the doctors were right. 

I don't believe I would've ever gotten better, I believe I would be getting worse, and I believe I would be taking medicine the rest of my life... if I continued to follow their advice. 

Thankfully, God had other plans for my life.

Chocolate Covered Strawberry Shake

Oh how I love deep red, juicy, addictively sweet organic strawberries!

Combined with rich chocolate flavors and the added sweetness of bananas or dates, these strawberries will allure even the most diehard "carnivore."

Oh! I just love this smoothie/shake! I just had to share the recipe with you! 
There's three ways to make it: with dates or bananas or both! 

Printable Recipe

Date Version

  • about 1/2 pound of pitted dates (about 15 Medjool or 20-25 smaller dates like Honey or Khadrawy) 
  • 1 c. organic strawberries (de-stemming optional)
  • 1 heaping t. carob powder (I prefer the taste of roasted carob)
  • 3-5 c. purified water (depending on desired thickness)

Banana Version

  • 6-8 spotty, ripe bananas
  • 1 c. organic strawberries
  • 1 heaping t. carob powder
  • 2-3 c. purified water (depending on desired thickness)

Banana & Date Version

  • 3-4 spotty, ripe bananas
  • 5 pitted Medjool dates or 10 pitted smaller dates
  • heaping t. carob powder
  • 2-3 c. purified water (depending on desired thickness)

  1. Place all ingredients into the blender with the dates/bananas in the bottom.
  2. Pulse blend till smooth. Enjoy!

Super Satisfying Tex Mex Salad!

Oh. My. Word. Made this salad last night for me and my husband's dinner and it was soooooo good!!!

It's savory. It's sweet. It's crunchy. It's creamy. It's quick. It's easy. It's super satisfying.
Basically, it's EPIC.

I can hear your stomach growling from here. But don't be embarrassed. It's okay, I understand. Just make this salad tonight and everything will be okay. :)

I found some organic roasted corn in the frozen section of Whole Foods and thought, "Hmmm... never had this before. Let's try it!" So I tossed it in my shopping cart along with my box of organic fair-trade bananas, 3 cartons of fresh squeezed orange juice, 12 heads of romaine, and frozen organic mangos and peaches. And I was just getting started. :)

If you follow an all raw diet, feel free to substitute fresh raw corn in the recipe because it will still be an epic salad. But if you aren't, then you must try the organic roasted corn! It has an amazing flavor!
When it comes to corn, I always try to go organic. I recommend staying away from GMOs and nasty pesticides and chemicals whenever possible. I also find that organic corn doesn't upset my sensitive tummy like conventional corn does. 

Printable Recipe
  • 3 heads organic romaine, washed
  • 1/2 pint cherry tomatoes
  • about 1 c. mango (fresh or thawed frozen)*
  • 1-2 c. organic roasted corn*
  • small handful of cilantro
  • juice from 1 large lime (or 2 small limes, about 2-4 T. to taste)
  • 1 avocado, sliced or diced
  • 1/4 c. sun dried tomatoes
  1. Chop romaine and place in large serving bowl.
  2. Set aside 6 cherry tomatoes and place the rest in the blender. Then add the mango, cilantro, and lime juice to the blender. Pulse till blended but still chunky (to the consistency of salsa). Pour the mango dressing on the salad.
  3. Slice the remaining tomatoes and add them along with the corn, avocado, and sun dried tomatoes to the salad. Mix salad well till lettuce is evenly coated and serve. Enjoy!
*Don't thaw frozen mango and corn in the microwave! Instead, place a strainer in a bowl and cover with hot tap water. Strain and repeat till thawed through.
