When I buy dates from the local grocer, I often can only find dates that are dry. Sometimes I'll buy a package that looks great on the outside, only to find out later that half of them are bad (bugs, mold, etc.). From what I understand, those issues occur in storage and not from an infested tree. If that's the case, then MedjoolDates.com does it right!

What I have really appreciated about MedjoolDates.com is that I've only gotten fresh, quality dates. I very rarely get a bad one... maybe 1 or 2 in a 10 pound box. I typically buy the 10 pound box of Large Organic Medjool Dates. I definitely get my money's worth!

We're Here and Half Way There! Bonus: Our Road Trip Food List!



Woohoo! We're here! We made it to our new home and survived the drive across America! We actually had a great time and tried to make the long drive fun. I'm also over half way through my pregnancy! Praise the Lord! It's been blissful and I can't wait to update you... be sure to subscribe!





We listened to audiobooks. 


So thankful our library has an e-lending service where you can rent e-books and e-audiobooks through an app. One of our favorites was Unbroken. I highly recommend this book! Definitely listen to the very end. The end is the best part! :)




We stopped for a weekend 


at one of our favorite places on earth: where we first met. <3






We visited family. 







We had a touring day. 


This was such a fun day! We drove through the breathtaking Badlands and had a picnic, visited historic Mount Rushmore, then drove through the Blackhills, Custer State Park (buffalo and prairie dogs!!), and along Needles Highway (AMAZING!).

We ate good food.


Although we made some space in our food budget to eat at restaurants along our road trip, we didn't end up eating out even once. We were surprised too!

We planned ahead and brought a lot of food, but mostly we stopped at Super Walmarts and local grocery stores to restock our food supply.


One of our favorites: hummus wraps!


If you're like me then you need munchies to help you stay focused while driving long distances.

Here's some of the things we enjoyed along our road trip:

  • Nectarines (in season and so delicious!)
  • Bananas (not such a good idea because it was hard to keep them from bruising and ripening too fast)
  • Apples
  • Grapes
  • Strawberries
  • Bags of pre-washed lettuce
  • Salad dressing (when I can't make my own, the best tasting store bought dressings I found are Annie's lite honey mustard and Annie's lite Italian)
  • Cucumbers
  • Tomatoes
  • Carrots
  • Hummus (I'd look for the lowest fat/sodium I could find)
  • GF brown rice tortillas (for me) and flour tortillas (for hubby)
  • GF yeast free vegan bread (for me) and multigrain bread (for hubby)
  • Almond butter and Organic low sugar jelly
  • Cereal (I like millet puffs and organic corn flakes, but hubby likes Cheerios) :)
  • Unsweetened almond milk
  • Instant potatoes (ingredients = just potatoes)
  • Ketchup and mustard
  • No salt added salsa
  • Organic vegan baked beans (if it's in a can, don't forget a can opener!)
  • My most-used spices
  • Rice crackers
  • Air popped popcorn (no oil or salt)
  • All natural xylitol gum (my compromise to help me stay awake while driving)
  • 3 liter/ 1 gallon jugs of spring water (it's so easy to forget to drink enough on road trips. I find it easiest to buy large jugs to help me keep track and make sure I drink enough throughout the day).

One night in the middle of our journey, we were able to find an amazing deal on a hotel that had a mini kitchen. We cooked up some GF brown rice pasta and made some homemade marinara to go with our huge Italian salad. It was a delicious meal and relaxing evening in the midst of a hectic week!

We brought a cooler and had ice packs. Since most hotels today have mini fridges, we were able to refreeze our ice packs most nights.

Some of our meals: 
  • Fruit meal! (super helpful for long travel days which often lead to fossilized digestion)
  • Almond butter and jelly sandwiches
  • Salads with dressing and mix-ins like rice crackers, tomatoes, cucumbers, etc.
  • Veggie wraps with hummus, lettuce, cucumber, and tomato
  • Mashed potato wraps with lettuce and spices with a side of baked beans
  • Cereal with fruit
  • Pasta and marinara
  • Hummus sandwiches with lettuce, cucumber, tomato, and a pinch of mustard with a side of rice crackers

I hope this helps you in planning healthy vegan food for road trips! This list can also be modified for camping trips, airplane rides, or everyday packable lunches.

Quick Caesar Salad & Quick Update!



Hi friends!

I just had to give you all a quick update on my vegan pregnancy and life and also share this delicious new recipe I found that I've eaten almost every day for 2 weeks!

First, pregnancy is just beautiful right now! I love it! I feel more like a normal human being now that I have more consistent energy and my nausea is gone. I'm in my 18th week of pregnancy, and I felt baby for the first time this week! I'm looking forward to feeling baby move even more as the weeks progress. What a sweet gift from God!




For a while I was having strong food aversions to raw leafy greens. Thankfully, those have fully subsided, and I now crave with a passion large salads. My hubby has taken me on a couple all-you-can-eat salad bar dates which I've thoroughly enjoyed. It's nice to once in a while not have to cut up 3+ heads of romaine, mix together a salad dressing, chop up toppings, etc. and get in a good, healthy and filling meal.




A few weeks ago, my hubby and I got to hear Dr. Barnard speak at a Whole Foods! What a treat! He talked about how diet affects diabetes, as well as many other health issues and the environment. He shared scientific studies, research, and testimonials from people who've reversed and healed many diseases. It was really exciting!

The next month is going to be insanely busy. My husband and I are moving across the country to help with a church plant out West. We are so excited about this upcoming adventure; we are really aware of the fact that it is not going to be easy but totally worth it. :)

Now, on to the amazing Caesar Salad recipe! I absolutely LOVE this recipe because not only does it taste addictively amazing but also I can make a batch and keep it in the fridge for about 5 days! It's perfect to have on hand whenever the salad craving hits. I even had an "omnivore" friend over for lunch the other day and she adored this recipe!




My recipe is adapted from this recipe on Oh She Glows
It makes a lot, so you might want to half it or save some for later. :)




Printable Recipe
  • 3-4 heads of romaine, chopped
  • 1/4 c. raw cashews or almonds, soaked overnight if not using high speed blender
  • 1/2 avocado
  • 1 medium zucchini
  • 1/2-3/4 c. water
  • juice from 1.5-2 lemons (I like 2 for extra zing!)
  • 1 T Dijon mustard
  • 1 small garlic clove or 1/4 c. arugula
  • 1 T vegan Worcestershire sauce (I use Wan Ja Shan brand that's also GF)
  • 1/4-1/2 t sea salt
  • 1-2 T hemp seeds
  • 1/2 c. roasted chickpeas (I used homemade, oil free ones, but store bought work fine too)
  1. Chop up romaine and place in large serving bowl.
  2. Place cashews/almonds, avocado, zucchini, water, lemon juice, mustard, garlic/arugula, Worcestershire sauce, and salt in blender. Blend till smooth and creamy. Add 1-2 more T of water if too thick.
  3. Pour Caesar dressing over romaine and mix well to coat every leaf. Sprinkle hemp seeds on top as "parmesan" and toss will chickpeas as "croutons". Enjoy!
Tip: You can add other toppings as well! I enjoy green onions, mushrooms, cucumbers, or sun-dried tomatoes too. Also, this dressing recipe is excellent as a spread for wraps or as a dressing for steamed potatoes or pasta.

Special Announcement: My Vegan Superpower!




Hi friends! I wanted to send out a special announcement because I recently discovered my new vegan superpower!
I can make tiny humans. :)

Yes, yes, I know that this ability is not limited to vegans, BUT for me this is a big deal. For years I was told I would have fertility problems because of my autoimmune disease and thyroid issues; but since changing my diet to fruit-based high carb vegan and healing my health, that is no longer a concern.



My hubby and I are going to have a baby!



And the credit truly goes to God. Because as I've said before, God has supernaturally healed through natural means.

Cinnamon Sugar Donut Holes (Raw Vegan)




Have you ever wanted a sweet, doughy treat that's not a "moment on the lips, forever on the hips?"

Then you should definitely try this recipe! This delicious treat is chock full of vitamins and minerals as well as healthy carbs to satisfy your cravings and leave you feeling good about yourself.

Here are just some of the amazing nutrients found in this simple fruit based recipe:

  • B Vitamins
  • Folate
  • Vitamin A
  • Vitamin K
  • Calcium
  • Copper
  • Iron
  • Magnesium
  • Manganese
  • Phosphorus
  • Potassium
  • Zinc


This donut hole recipe is such a treat! It's perfect for parties, a snack, or even breakfast!
Even my hubby who is not usually a fan of super sweet treats found these to be delicious and satisfying. I think it's the coconut flour. Just adding a little makes a huge difference. Try this recipe, and you'll see what I mean. Coconut flour gives it a deeper, richer flavor and a slightly fluffier texture. Perfect for raw vegan donut holes!




Printable Recipe
  • 15 pitted Medjool Dates
  • 1/4 c. packed raisins, opt.
  • 2.5 T coconut flour
  • 1 T coconut sugar
  • 1/4 t cinnamon
  • pinch of allspice or nutmeg
  • 1/8 t vanilla powder, opt.

  • 3 T coconut sugar
  • 1 t cinnamon

  1. Place pitted Medjool dates and raisins in food processor, then add coconut flour, 1 T coconut sugar, 1/4 t cinnamon, allspice, and vanilla. Pulse till it all forms into a big lump of doughy goodness.
  2. Mix 3 T coconut sugar and 1 t cinnamon in small bowl. Scoop out date mixture and roll in hands to form a donut hole.* Roll donut hole in cinnamon sugar mixture to evenly coat. 
  3. For firmer donut holes, cover and place in fridge for 30 minutes. Enjoy!


*Tip: Wet hands with water to keep the date dough from sticking too much.
