Zucchini Pasta & Creamy Sweet Corn Sauce



Ever enjoy a good, hearty creamy pasta dish, eat four platefuls, and feel good about it? I know I just did!

Ingredients:

  • 2 lb. of zucchini, spiralized (about 2-3)
  • 2 lb. of cucumber, spiralized (about 2-3)
  • 2 c. plus 1 c. fresh corn (or thawed frozen)
  • 1 c. plus 1 c. favorite tomatoes
  • 1/4 avocado
  • 1 large basil leaf
  • 3 Medjool dates, pitted
  • 2 c. fresh mango (or thawed frozen)
  • 1 head of celery (about 1 1/2 - 2 c.)
  • Juice from 1 lemon
  1. Spiralize your zucchini and cucumber with a spiral slicer and place in large serving bowl.
  2. Place 2 c. corn, 1 c. tomatoes, avocado, basil, dates, mango, celery, and lemon juice in blender and blend till creamy. Pour sauce over noodles.
  3. Chop up remaining 1 c. of tomatoes, and mix tomatoes and corn in with the pasta and sauce. Enjoy!
